Smoked Sausage with Peppers & Onions


  • 1 lbs Cheap Smoked Sausage Hillshire Farm, Farmer John's, Kroger, etc.
  • 1 lbs Onion, slivered Select a sweeter variety
  • 1 lbs Bell Pepper, sliced Any color will do
  • Salt and Pepper to taste
  • 2 tbsp Vegetable oil
  • Steamed white rice Jasmine preferred


  1. Preheat 12" skillet over medium-high heat for 5 minutes. add oil during last 2

  2. Slice sausage to your preferred thickness, I like mine to be approx 1/2"

  3. Add sausage to preheated skillet and spread evenly. Allow to brown without moving, about 3 minutes.

  4. Stir to turn and repeat previous step.

  5. Add onions and bell pepper and reduce heat after 1 minute to medium.

  6. Cover skillet and caramelize onions, stirring occasionally, 7 minutes. (This will create a sauce)

  7. Add salt and pepper to taste and turn off heat.

  8. Serve immediately with hot white rice.
