Preheat 12" skillet over medium-high heat for 5 minutes. add oil during last 2
Slice sausage to your preferred thickness, I like mine to be approx 1/2"
Add sausage to preheated skillet and spread evenly. Allow to brown without moving, about 3 minutes.
Stir to turn and repeat previous step.
Add onions and bell pepper and reduce heat after 1 minute to medium.
Cover skillet and caramelize onions, stirring occasionally, 7 minutes. (This will create a sauce)
Add salt and pepper to taste and turn off heat.
Serve immediately with hot white rice.
